Zesty Grilled Chicken (Herbs)

Makes 8 servings

  • 1/2 c olive or canola oil
  • 1/2 c soy sauce
  • 4 Tbsp lemon juice
  • 3 Tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 Tbsp whole cloves
  • 1 tsp ground black pepper
  • 1/4 c minced fresh thyme
  • 1/4 c minced fresh basil
  • 8 boneless, skinless chicken breast halves
  1. Place oil, soy sauce, juice, sugar, garlic, cloves, pepper, thyme and basil in large zipper lock plastic bag. Seal and turn to mix ingredients.
  2. Add chicken to bag. Seal and refrigerate 4 - 24 hours, turning bag often to distribute marinade. When ready to cook, place chicken in a bowl and place marinade in saucepan. Boil marinade 2 minutes.
  3. Grill, cover closed, over medium coals, basting often with boiled marinade, until juices run clear, about 10 minutes per side when grilled 4 inches from coals.
