Baked Radishes
Makes 4 servings
- 1/2 lb radishes, trimmed abd halved
- 1 Tbsp honey
- 1 Tbsp butter
- 1 tsp cinnamon
- Steam radishes 5 minutes.
- Drain and arrange in a shallow baking dish
- Combine honey, butter and cinnamon in a small saucepan. Warm and stir until butter is melted.
- Pour over radishes. Bake uncovered at 350 degrees until tender, about 30 minutes.
Rhubarb Crunch
Makes 8-10 servings
- 1 c flour
- 3/4 c uncooked quick oatmeal
- 1 c brown sugar
- 1/2 c (1 stick) butter, softened
- 1 tsp cinnamon
- 4 c diced rhubarb
- 1 c sugar
- 2 Tbsp cornstarch
- 1 c water
- 1 tsp vanilla
- Mix the flour, oatmeal, brown sugar, butter and cinnamon with fingers or pastry blender until crumbly. Press 1/2 of mixture into bottom of 8 or 9 inch square pan. Top with rhubarb; set aside.
- In a saucepan, combine sugar, cornstarch, water and vanilla; cook over medium-high heat until thick and clear, about 5 minutes. Pour over rhubarb. Top with remaining flour mixture.
- Bake at 350 degrees 45 - 60 minutes, or until rhubarb is tender and topping is lightly browned.
